The varieties that give life to Puglia's green gold

Olive oil, described by many as the 'gold of Puglia', is an ancient and precious food of the land from which it is born. In our territory we find many varieties of olive trees, each with unique characteristics that give the oil different aromas, flavours and properties.

The tree

The tree is quite vigorous with a medium-to-dense canopy. Specimens of considerable size can be found, well over 100 years old. The olives are small.

The oil

The oil is golden yellow with light green glints. On the nose it is very pleasant, with medium-intensity fruity aromas and a characteristic almond note. Bitterness and pungency are well balanced. Overall it is a harmonious, elegant oil that combines aromatic richness with body.

The tree

A vigorous medium-sized tree with large, elliptical, dark-green leaves. The fruit is heart-shaped and medium-to-large in size.

The oil

The oil is golden with greenish glints and of excellent quality. The fruitiness is intense and slightly mature. The taste is robust, with toasted, vegetable and aromatic notes accompanied by a bitter edge and a good pungency.

The tree

The Coratina olive tree is medium-sized with short branches but a fairly wide canopy. This variety adapts easily to different soil types.

The oil

The oil is excellent and distinguished by its high concentration of polyphenols — powerful antioxidants beneficial to health. The colour is yellow with golden-green glints. The aroma is very aromatic and fruity, with a bold taste, slightly pungent and with a pleasantly bitter aftertaste.

The tree

The Leccino olive can reach large dimensions. One of its peculiarities is its weeping branches, somewhat reminiscent of a weeping willow.

The oil

The oil from this variety has a delicate, not too aromatic flavour with a light bitter and pungent aftertaste. The colour is golden yellow with greenish hues. It is often blended with oils from more intensely flavoured varieties.

Picholine

The tree

A variety of French origin but also widespread in southern Italy. The tree is vigorous and productive, with elongated olives.

The oil

The oil has a fresh, lively aromatic profile with herbaceous notes and hints of green almond. The taste is balanced, with a pleasant bitter and pungent component.

Cime di Melfi

Cime di Melfi

The tree

A variety typical of Basilicata, also found in the neighbouring areas of Puglia. The tree is vigorous and very productive.

The oil

The resulting oil is of great quality, with medium-to-intense fruitiness, herbaceous notes and hints of artichoke and almond. The taste is balanced, with a pleasant bitterness and good pungency.
