1983

Origins in Villa Castelli

The story of our oil begins in 1983 in Villa Castelli, a small town nestled in the heart of Puglia, among centuries-old olive groves and the ancient trulli of the picturesque Valle d'Itria. It is here that a tradition of passion, hard work and respect for the land comes to life.

In the beginning, production followed the most ancient methods: olives were pressed using millstones and traditional «fiscoli» mats, exactly as the ancient Romans did over two thousand years ago. A slow, natural process that preserved all the value of the olive-oil tradition.

2001

The move to Grottaglie

With the desire to improve production without losing the authenticity of our origins, in 2001 the mill was modernised and moved to its current location in Grottaglie, in Contrada Carmine. Here we also run our farm, where we cultivate with care and dedication many of our land's finest products: wine grapes, asparagus, apricots, orchards and many other riches that generous nature and human labour can offer.

Zero-kilometre production, uncompromised quality

Our pride is a truly zero-kilometre production. The olives come from our own groves or from trusted local growers. This allows us to harvest the fruit at the right stage of ripeness and process it immediately, preserving freshness, fragrance and quality.

From this dedication comes our oil «La Vecchia Grotta», an extra virgin olive oil with an authentic character and intense aroma, capable of enhancing the flavours of Mediterranean cuisine and bringing the soul of our land to the table.

Cold-extracted exclusively by mechanical means, our oil comes from olives harvested in Italy — largely from ancient Puglian olive trees — and processed in our mill with the same passion that has guided our work for over forty years.
