Frequently asked questions

Olives are harvested by hand or with mechanical aids and brought to our mill in Contrada Carmine, Grottaglie, within a few hours of picking. Milling takes place exclusively through cold mechanical processes, below 25°C, to fully preserve the aromas and nutritional properties of the oil.
Olives come from our own groves in Puglia or from trusted local growers we have selected over the years. This guarantees a truly short supply chain, with full control over the process from harvest to bottle.
We use mainly native Puglian varieties: Ogliarola, Coratina, Nociara and Leccino, as well as Picholine and Cime di Melfi. Each variety contributes distinct aromas, flavours and antioxidant properties, giving life to oils with a unique character.
Cold extraction ensures that throughout the milling process the temperature stays below a precise threshold. EU regulations set this limit at 27°C, but we choose to work below 25°C — a voluntary standard that better preserves the aromas, polyphenols (natural antioxidants) and vitamins of the oil, delivering a product of superior quality compared to heat-extracted oils.
Extra virgin olive oil should be stored away from direct light and heat sources, in a cool dry place. The ideal temperature is between 14°C and 18°C. Once opened, we recommend consuming the bottle within 3–4 months to fully enjoy its aromas.
Unopened extra virgin olive oil keeps for 18–24 months from the production date. You will always find the harvest date and best-before date on the label. We recommend consuming it within the first year from production — and within 3–4 months of opening — to enjoy its freshest, most intense aromatic profile.
Shipping within Italy is free for orders over €200; below this threshold a shipping fee applies. For deliveries to other European countries, shipping costs are always charged to the customer and are calculated at checkout based on the destination. Every order is carefully packed in purpose-designed packaging to protect bottles from shocks and leaks. In case of damage, we will refund you or reship the product at no extra cost.
